Use A Shaker For Excellent Cocktails
Refreshing Rhubarb Margarita Cocktail takes 15 minutes total preparation and cooking time. Not long to wait for this fabulous drink.
If you haven't got any, begin by making a simple rhubarb syrup. Very easy and quick!
In a little saucepan, mix up a cup of white sugar, 3 medium sized stalks of rhubarb chopped and 2/3 cup of water.
On medium heat, cook down for about 10 minutes. The rhubarb will reduce and release all of it's juices and the sugar will dissolve nicely.
Turn down the heat and just let it simmer until all has dissolved and the rhubarb has broken down to a nice soft consistency.
Stir the syrup occasionally to prevent sticking or burning. Remove from the heat and set aside to cool off.
At this point, if you want to run the simple syrup through a strainer or a piece of cheesecloth to catch any pieces of rhubarb, you can. Or just leave the bits and pieces in. Either way is fine and actually the bits of rhubarb enhances the drink.
To make the Margarita, you will need:
4 oz of Club Soda
4 oz of Tequila
4 oz of Cointreau
The juice from one whole lime
The juice from two oranges
A cocktail shaker, or something with a cover so nothing spills.
Take a cocktail shaker and add in the Tequila, Cointreau, club soda, and 4 oz of the rhubarb simple syrup. Top it off with the squeezed lime juice and the orange juice.
If you don't have fresh oranges, just add in one third to a half cup of orange juice.
Shake these ingredients up well in the shaker for about 20 seconds and serve in a nice chilled glass.
This will make a few nice sized (depending on the size and type of your glass) Rhubarb Margarita Cocktails for two. Or, better yet, drink them both yourself!
